Bombay Sandwich

This is my husbands version of Bombay sandwich, specially using three slices of bread rather than two. What makes this Bombay sandwich so special is the hearty white bread, lathered with butter, green chutney and lots of sliced vegetables, sprinkled with chaat masala, arranged in an orderly fashion layer by layer. An additional step is to toast it until it is crispy from outside, but looking at the size it is better not to toast it. Besides we love having it cold with a hot cup of chai and potato chips.
If you like it toasted, remove the middle slice of bread to make it bit thin.

Ingredients:

  1. Your favorite hearty white bread
  2. 1/2 cup unsalted butter
  3. 1 cup green chutney
  4. 1 cup tomato ketchup
  5. 2 thinly sliced beet (boiled)
  6. 2 boiled thinly sliced potato
  7. 1 thinly sliced cucumber
  8. 1 thinly sliced red onion
  9. 2 thinly sliced tomatoes
  10. chaat masala
  11. 1 cup shredded cheese (I use Amul Cheese )

Directions:

  1. Cut the brown edges of the bread. The best way is to stack them and cut together one edge at time. Like this all slices of bread of the same size.
  2. Place one slice of bread on a cutting board and generously apply butter and green chutney.
  3. Top it with first slices of potato, then cucumber and the onions. Spread 1/4 of cheese on it and sprinkle some chaat masala.
  4. Place another slice of bread on top, apply butter and tomato ketchup.
  5. Top it with slices of beet, tomatoes and onions. Spread 1/4 of cheese on it and sprinkle some chaat masala.
  6. Apply butter on third slice of bread and place it buttered side down.
  7. Apply thin layer of ketchup and cheese on the top if you like.
  8. Cut the sandwich into six or nine piece, depending in how you want to share :).
    Serve with potato chips.
