I have a confession to make, I have not made a successful batch of chocolate chip cookies until now. My definition of successful batch means lite crispy from outside and gooey from inside.
One of the advantage of having a foodie husband is you will end up getting lot of reddit and youtube links for various food recipes in your daily chat 🙂 In one of those links I came across binging with babish’s chocolate chip cookie recipe and I had to try it. What could be a better occasion than Saahil’s 100th day celebration.
I tried my best to explain how I understood the recipe but do checkout the youtube link to get a better idea.
Ingredients:
- 1 cup unsalted butter
- 2 eggs
- 1/2 cup granulated sugar
- 1 1/2 cup cups dark brown sugar
- 11 1/2 ounce all purpose flour
- 1 tablespoon kosher salt
- 1/2 teaspoon baking soda
- 7 ounces your favorite chocolate chips
- 1 teaspoon cinnamon (optional)
Directions:
- Heat 1 cup butter in a pan until nutty golden brown. We don’t want to burn the butter, just until it gets golden brown.
- Transfer the butter in a bowl and let it freeze for an hour or until it solidifies.
- Once butter solidifies, transfer it in a stand mixer bowl. Add both sugars and mix at medium speed for 3-4 mins.
- Turn off the mixer, add eggs and mix until a homogeneous mixture is formed.
- Mix all remaining dry ingredients in a mixing bowl. Add half of dry mixture at a time to egg mixture until everything is mixed.
- Finally add chocolate chips and mix until a dough is formed. Freeze the dough for over 3 days.
- When ready to bake, preheat the oven to 370 F.
- Line the baking sheet with silpat mats, remove the dough from the fridge and scoop about 1/4 cup dough and place it on the baking sheet. You use your hand to mold the dough.
- Place the dough a inch part to prevent cookies sticking to each other.
- Bake for 12-15 mins based on how soft you like your cookies.
Serve warm!
