I propose a picnic this weekend! Plus, it’s a long weekend; more days to explore new parks. There’s really nothing better than a summer picnic in good company, is there?
When it comes to picnic, my brain won’t think beyond sandwiches! And why should I! Sandwiches are prefect for picnic or even for a lightening fast meal.
This sandwich has quickly grown on us to be our regular picnic/lunch options. Hummus on bread? Are you sure? Yes! Do not limit the greatness of hummus to just pita bread and carrots. Spread it on your favorite bread with all your crunchy veggies and it’s a meal that could not be any easier!

Hummus Sandwich
Ingredients
- 4 slices of bread of your choice I used 5 seeds multigrain bread
- 1/4 cucumber sliced
- 1 small tomato sliced
- 1/4 onion sliced
- 1/4 cup pickled carrots see notes on how to pickle veggies
- 1 bell pepper cut into 1/2 inch pieces, roasted(optional)
- 1 cup hummus I used Kirkland brands organic plain hummus
- 2 slices of mild cheese provolone or colby jack
Instructions
- Lightly toast the bread to remove excess moisture.
- Placed pickled carrots and sliced tomatoes on a paper towel and blot them to remove extra water.
- Arrange sliced cucumbers on bottom bread, top with layer of hummus (1/4 cup).
- Add cheese, pickled carrots, onions, tomatoes and bell pepper.
- Spread 1/4 cup of hummus on top slice of the sandwich and place it on the top.
- Repeat the steps for second sandwich.
- Serve them immediately or wrapped them in a plastic warp and refrigerate until ready to serve.
