“What! This much noodles in not enough for everyone, it’s just enough for me!!” Does this sound like you? You question the quantity of noodles everything time you make them? You are like me!
I have at least 5 types of noodles in my pantry (ramen, egg noodles, soba, udon, maggie); why? Because I love them! They are the actual best. You can build almost any type of meal around any type of noodles.
Here is an easy, quick and tasty sweet and spicy stir fry recipe; cooks in under 3 minutes, you would want to make it for multiple meals.

Sweet & Spicy Noodles
Quick and easy noodle stir fry.
Ingredients
Sauce
- 1 tbsp soy sauce
- 2 tbsp toban djan (chili bean sauce) found in asian market
- 1 tsp rice vinegar
- 1/2 tsp sesame oil
- 1 tbsp maple syrup
- 1/4 tsp salt
Stir Fry
- 5 gloves of garlic minced
- 1 tbsp of minced ginger
- 4 green onions
- 3-4 broccolini
- 1/4 cup peanuts
- 2 tsp sesame seeds
- 150 g ramen noodles
- 2 tbsp cooking oil
- 1/2 tsp chili flakes optional
- salt as per taste
Instructions
- Combine all ingredients for sauce and set aside.
- Finely chop the green onions, keeping the white and green part separate. Cut broccolini into small chunks and keep them aside.
- Toast the peanuts in a nonstick pan, repeat the same for sesame seeds. Keep them aside.
- Bring water to boil for the noodles. Cook the noodles for half the time as directed on the package. I cooked my noodles for 3 minutes. Gently separate the noodles with fork or chopstick. (Let the noodles be in water until ready to put in the pan)
- In a nonstick pan on a medium heat, add the oil followed by ginger, garlic and white part of green onions. Cook for about a minute.
- Add chili flakes if using along with pinch of salt and broccolini and cook for another minute.
- Stir in peanuts, sesame seeds and green part of onions. Save some for garnishing.
- Strain the noodles directly into the pan, give them a big stir and then add the prepared sauce. Adjust the seasoning as per your taste.
- Let the noodles cook for a minute.
- Serve warm, garnish with toasted peanuts, sesame seeds and green onions.
