In a food processor add all the ingredients except one bunch of cilantro, blend until everything completely incorporated. Adjust salt, pepper and spice level (add additional pepper) as per your liking.
Add the remaining bunch of cilantro and pulse it until the cilantro is chopped. (I ended up pulsing it more, just two to three pulses would do)
Store in an airtight container in fridge. (I freeze half of the sauce but honestly at the rate it was consumed, it wasn't necessary)
