Savory Waffles

Everything you want in a hearty breakfast as a waffle.

Ingredients
  

  • 2 cups tightly packed shredded potatoes ~ 1 russet potato
  • 4 eggs
  • 1/4 cup shredded cheese of your choice
  • 1/2 cup soyrizo
  • 1/2 cup chopped spinach
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp salt or as per taste

Instructions
 

  • Preheat the waffle maker. My waffle maker has a setting for how brown you would like your waffles on scale of 1 to 5, I had it at 5.
  • Have two bowls filled with cold water ready. Immediately after shredding the potato transfer it to one of bowl, swirl the shredded potatoes two to three times and transfer them to the next bowl. Don't drain the potatoes, rather use either hand or a slotted spoon to transfer. Repeat the process, swirl and transfer for two to three times, until the water is almost clear. Every time you transfer the potatoes, use clean water. This process will remove the excess starch from potatoes.
  • Lay two layers of kitchen towels and spread the potatoes once the starch is removed. Cover with kitchen towels and press gently to let out excess water. Let the potatoes dry for 10 minutes.
  • In a large mixing bowl mix all the ingredients, including the potatoes.
  • Once the waffle maker is ready, apply butter or cooking spray and carefully spread 1/2 to 3/4 cup of the mix on the waffle maker.
  • Close the lid and wait for the ready light to turns on. If waffles are not brown enough, flip it and give it another minute.
  • Carefully remove the waffles to a plate.
  • Feel free to top the waffles with sliced avocado, hot sauce and/or whipped goat cheese. Be creative!
