Broccoli Cauliflower Salad

 

Last month was my birthday month; Yes! I am one of those people who loves their birthday and I celebrate by making sure I do/eat things I love the most. So between burgers, samosas, noodles and mango lassi, it’s an understatement when I say I ate lots of carbs. (It was worth it!)

So here I am feeling all content ready to take a notch down, consciously reducing portions and eating more fiber. In times like this I rely on my favorite detox salad and smoothie. Both of them are pretty customizable and come together in 15 minutes or else. I will keep you posted on more of lighter meals I am planning on making this month.

Broccoli Cauliflower Salad

Ingredients
  

  • 1 head of cauliflower
  • 1 head of broccoli
  • 1 cup shredded carrots
  • 1/2 cup chopped parsley
  • 1/2 cup dired cranberries I used orange infused cranberries
  • 1/2 tbsp thyme
  • 1/3 cup roasted sunflower seeds unsalted
  • 1/4 cup roasted nuts of your choice I used almonds
  • juice of one lime
  • dash of cayenne pepper
  • salt & pepper as per taste

Instructions
 

  • Remove the stems of cauliflower and broccoli and process them in a food processor (separately) until fine. Empty them in a large mixing bowl.
  • Add carrots, parsley, cranberries, thyme, sunflower and nuts and give the salad a nice mix.
  • Next add cayenne pepper, lime juice, salt and pepper; mix and let the salad rest for 5 minutes.
  • Serve it at room temperature. Leftovers can be stored in airtight container in fridge.

Spinach Pineapple Smoothie

My goto meal when I feel 'I ate too much'

Ingredients
  

  • 4 cups spring mix or just spinach
  • 1 1/2 cups frozen chunks of pineapple
  • 1/2 banana frozen preferred
  • 1/2 cup frozen mango
  • 1 celery rib chopped
  • 2 tsp grated ginger or 1/2 tsp dried ginger powder
  • 1 tbsp chia seeds
  • 2-3 cups water based on preferred consistency

Instructions
 

  • Add all ingredients in the blender, in the order they are listed above (especially if you are using vitamix) and blender until the mix is completely smooth.
  • Serve immediately.
